Ingredients
Chicken and Seasoning
- 2 lbs. chicken tenders (boneless chicken breasts and thighs work too)
- 4-5 tablespoons oil for marinade and cooking chicken
- 2 tablespoons smoked paprika or regular paprika
- 1 tablespoon cayenne pepper
- 1 tablespoon onion powder
- 2 teaspoon garlic powder
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
Sliders and Toppings
- 1 pack Hawaiian slider buns or dinner rolls
- Mayonnaise, to taste
- Sweet Baby Rays Golden Mustard (honey mustard works as a substitute)
- 8 strips bacon, cooked crisp
- Colby jack cheese (enough slices for the sandwiches)
- 1/2 head lettuce
- 1/2 small red onion, sliced thin
- 2 Roma tomatoes, sliced thin
Butter Topping
- 1/2 stick butter (softened)
- 1 tablespoon fresh parsley (chopped)
- 2 cloves garlic (minced)
Instructions
- Season the Chicken: Place the chicken tenders into a large zip-top bag or bowl. Add several tablespoons of the blackened seasoning mixture (paprika, cayenne, onion powder, garlic powder, black pepper, salt, thyme, oregano) and a few tablespoons of oil. Mix thoroughly to coat the chicken evenly on all sides, ensuring the tenders are well seasoned.
- Cook the Chicken: Heat a skillet with oil over medium-high heat or preheat a grill. Cook the chicken tenders for about 3 minutes per side, flipping just once, until they are cooked through and have a nice sear.
- Prepare the Butter Topping: While the chicken cooks, combine the softened butter, chopped fresh parsley, and minced garlic in a small bowl. Microwave for about 30 seconds until the butter melts, then stir to thoroughly mix the ingredients.
- Toast Slider Buns: If needed, slice the slider buns horizontally with a serrated knife. Arrange the buns cut side up on a baking sheet and toast them under the broiler just until golden brown, about a few minutes. Remove from the oven and flip the top buns so their domed tops face upward, placing them alongside the bottoms on the pan.
- Assemble the Sliders: Spread a generous squeeze of mayonnaise on each bottom bun. Evenly distribute the cooked chicken tenders over the bottom buns, ensuring each slider gets at least one piece.
- Add Honey Mustard and Cheese: Dollop the golden honey mustard over the chicken layer, then place a slice of colby jack cheese on top of each slider.
- Broil to Melt Cheese: Spread the prepared garlic parsley butter mixture on the top buns. Return the baking sheet to the broiler for 1-2 minutes until the cheese softens and the top buns are slightly toasted.
- Add Fresh Toppings: Remove the sliders from the broiler and top each with crisp bacon strips, thin slices of tomatoes, red onion, and fresh lettuce. Drizzle another small amount of honey mustard on top before placing the buttered top buns over the fillings.
- Serve: Slice the assembled sliders to separate them, then serve immediately while warm and flavorful.
Notes
- For a spicier slider, increase the cayenne pepper to taste.
- Hawaiian slider buns or soft dinner rolls work best for the perfect texture and sweetness contrast.
- You can substitute colby jack cheese with cheddar or pepper jack for a sharper or spicier flavor.
- To cook bacon faster, bake it in the oven on a foil-lined baking sheet at 400°F for 15 minutes.
- If you prefer, chicken breasts or thighs can be used instead of tenders; adjust cook time accordingly.
- Leftover sliders can be wrapped and refrigerated up to 2 days, best reheated in an oven for crispness.
