Description

Ingredients

Praliné Croustillant

  • 170 g chocolate praliné (bar)
  • 1 packet of crunchy biscuits (such as crêpes dentelle)

Mousse au Chocolat Blanc

  • 180 g white chocolate
  • 20 cl heavy cream (35% fat)

Fruit Topping

  • 1 ripe pear
  • Juice of 1 lemon
  • 1 small biscuit or thin tuile (optional, for garnish)


Instructions

  1. Prepare the Praliné Croustillant: Melt the praliné chocolate using a bain-marie method. Roughly crush the crunchy biscuits to preserve some texture. Mix the melted chocolate and crushed biscuits thoroughly, then distribute the mixture evenly at the bottom of 4 verrines or similar glassware. Smooth slightly and refrigerate for at least 2 hours.
  2. Make the White Chocolate Mousse: Gently melt the white chocolate and let it cool slightly to a lukewarm temperature. Whip the heavy cream into soft peaks, avoiding overwhipping. Fold half of the whipped cream gently into the melted chocolate, then incorporate the remaining cream carefully to create a light, airy mousse. Pour the mousse over the chilled praliné layer in the verrines. Refrigerate for at least 3 hours or overnight for best results.
  3. Add the Fruit Topping: Peel the pear, remove the core and seeds, then dice it into small pieces. Toss the pear cubes with lemon juice immediately to prevent browning. Spoon the pear pieces gently onto the set white chocolate mousse layer. Finish by placing a small biscuit or thin tuile on top, adding an extra crunchy element before serving.
