Ingredients
Cashew Base
- 1 1/2 cups raw cashews
- 1-1 1/2 cups non-dairy milk (plain almond milk recommended)
Flavorings
- 1/3-1/2 cup nutritional yeast
- 1 teaspoon salt
- 1 clove garlic
- 1 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 tablespoon tomato paste
- 2 tablespoons lime or lemon juice
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1 tablespoon hot sauce (or to taste)
Instructions
- Soak Cashews: Place the raw cashews in a bowl and cover them with boiling water. Let them soak for about 20 minutes to soften. Alternatively, boil the cashews in a pot for 15-20 minutes if you do not have a high-speed blender to ensure they’re soft enough for blending.
- Drain Cashews: After soaking, drain and rinse the cashews thoroughly, then transfer them to a blender.
- Blend Ingredients: Add the non-dairy milk, nutritional yeast, salt, garlic, onion powder, garlic powder, tomato paste, lime or lemon juice, chili powder, paprika, and hot sauce to the blender with the cashews. Blend everything until the mixture becomes completely smooth. Start blending with 1 cup of non-dairy milk, then add more as needed to achieve your desired consistency.
- Taste and Adjust: Taste the queso and adjust the seasonings according to your preference, adding more salt, hot sauce, or lime juice if desired.
- Warm the Queso: Pour the blended queso into a pot or pan and heat over low heat. Stir occasionally to prevent burning and warm the queso through.
- Serve: Serve the cashew queso warm as a dip or sauce and enjoy!
