Instructions

  1. Combine Wet and Dry Ingredients: In a large mixing bowl, add the wet ingredients first — dairy-free milk, apple cider vinegar, applesauce, neutral oil, and vanilla extract or vanilla bean paste. Then add the dry ingredients — all-purpose flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, allspice, ground ginger, and salt. Whisk everything together until the batter is smooth and well combined.
  2. Prepare and Fold in Apples: Wash and finely chop the apples into small pieces, approximately 1/4-inch squares, to ensure they cook evenly and blend well in the cake. Fold the chopped apples gently into the cake batter, distributing them evenly.
  3. Bake the Cake: Transfer the batter to a greased or lined 9×9 inch baking pan, spreading it evenly. Bake in a preheated oven at 350°F (175°C) for 50 to 55 minutes. Check doneness by inserting a toothpick in the center; it should come out clean when the cake is fully baked.
