Description

A refreshing and healthy Tzatziki Chicken Salad combining creamy Greek yogurt with fresh herbs, crunchy vegetables, and tender chicken. This versatile salad can be served on its own, over greens, in pita pockets, or as a satisfying wrap, offering a Mediterranean-inspired meal packed with flavor and protein.

Ingredients

Dressing

  • 1 cup plain Greek yogurt
  • 1/2 cup grated English cucumber (excess moisture squeezed out)
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves (peeled and grated)
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Salad

  • 4 cups cooked chicken (chopped or shredded)
  • 1 cup diced cucumber
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese

Instructions

  1. Prepare the Tzatziki Dressing: In a medium bowl, combine the Greek yogurt, grated cucumber, fresh lemon juice, grated garlic, chopped dill, parsley, sea salt, and black pepper. Stir thoroughly until all ingredients are well incorporated and the dressing has a smooth consistency.
  2. Combine Salad Ingredients: Add the chopped or shredded cooked chicken, diced cucumber, diced celery, diced red onion, and crumbled feta cheese to the bowl with the tzatziki dressing. Mix until all components are evenly coated with the dressing, ensuring balanced flavors throughout the salad.
  3. Adjust Seasonings and Serve: Taste the salad and adjust seasoning if needed by adding more lemon juice, salt, or pepper. Serve the Tzatziki Chicken Salad chilled or at room temperature over fresh greens, with pita chips, inside a pita pocket, in a lettuce cup, or wrapped in a sandwich. Optionally, garnish with chopped tomatoes, kalamata olives, extra feta, and fresh herbs for additional Mediterranean flair.

Notes

  • To avoid excess moisture, be sure to squeeze out water from the grated cucumber before adding it to the yogurt.
  • This salad can be prepared in advance and kept refrigerated for up to 2 days for optimal freshness.
  • Use cooked chicken leftovers or rotisserie chicken for convenience.
  • Feel free to customize the salad by adding olives, cherry tomatoes, or substitute herbs as preferred.
  • Serve chilled or slightly warmed depending on preference.
