Description

A refreshing and healthy Tzatziki Chicken Salad that combines tender cooked chicken with a creamy Greek yogurt and cucumber dressing, enhanced by fresh herbs and tangy feta cheese. Perfect for quick lunches, sandwiches, or light dinners, this recipe delivers bright Mediterranean flavors in just 15 minutes.

Ingredients

For the Tzatziki Dressing

  • 1 cup plain Greek yogurt
  • 1/2 cup grated English cucumber, excess moisture squeezed out
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves, peeled and grated
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

For the Salad

  • 4 cups cooked chicken, chopped or shredded
  • 1 cup diced cucumber
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese

Instructions

  1. Prepare the Tzatziki Dressing: In a medium bowl, combine the Greek yogurt, grated cucumber, fresh lemon juice, grated garlic, chopped dill, chopped parsley, sea salt, and black pepper. Stir vigorously until all ingredients are thoroughly mixed into a creamy dressing.
  2. Combine Salad Ingredients: Add the cooked, chopped or shredded chicken, diced cucumber, diced celery, diced red onion, and crumbled feta cheese to the bowl with the dressing. Gently stir until everything is evenly coated with the tzatziki mixture. Taste the salad and adjust seasonings if needed by adding more lemon juice, salt, or pepper.
  3. Serve: Serve the Tzatziki Chicken Salad over fresh greens, with crunchy pita chips, inside a pita pocket, wrapped in lettuce cups, or as a sandwich or wrap filling. Optionally, garnish with chopped tomatoes, kalamata olives, extra feta, and additional fresh herbs for enhanced flavor and presentation.

Notes

  • Make sure to squeeze out the excess moisture from the grated cucumber to avoid a watery salad.
  • This salad can be made ahead and refrigerated for up to 2 days for the flavors to meld well.
  • Use rotisserie chicken or any leftover cooked chicken for a quick meal prep option.
  • Adjust the amount of garlic and herbs according to your taste preference.
  • Serve chilled for the best refreshing taste.
  • For a dairy-free version, substitute Greek yogurt with a plant-based yogurt and omit the feta cheese.
