Bread & Cheese

Caramelized Onion & Raisin Mixture

  • 1 tbsp extra virgin olive oil
  • 1 tsp fresh herbs, chopped (such as rosemary, thyme, basil, or chives)
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 1/8 tsp ground cinnamon


Instructions

  1. Caramelize the Onions: In a small pan over medium-high heat, heat 1 tablespoon of extra virgin olive oil. Once hot, add the sliced onions and sauté until softened. Reduce the heat to low and continue cooking the onions until they become browned and caramelized, approximately 15 minutes. Remove the pan from heat.
  2. Mix in Raisins and Seasonings: Stir in the raisins, fresh herbs, salt, black pepper, and ground cinnamon into the caramelized onions. Set the mixture aside.
  3. Preheat the Broiler: Turn on your oven broiler and let it preheat to prepare for toasting the sandwich.
  4. Prepare the Bread: Cut the baguette into 4 equal pieces. Then cut each piece in half lengthwise to create sandwich halves. Place each piece cut side up on a baking sheet.
  5. Add Brie Cheese: On the bottom halves of the baguette, evenly layer slices of brie cheese.
