Batter

Sausages & Cooking Fat

  • 8 good quality pork sausages
  • 2 tbsp beef dripping or sunflower oil

Instructions

  1. Preheat the Oven: Preheat your oven to 220°C (200°C fan). Place a deep roasting tin inside the oven to heat thoroughly. This ensures the batter rises properly when baked.
  2. Prepare the Batter: In a large bowl, whisk together the flour and salt with the eggs until smooth. Gradually add the milk, whisking continuously to create a lump-free batter. Let the batter rest for 30 minutes to relax the gluten and improve texture.
  3. Brown the Sausages: Carefully remove the hot roasting tin from the oven. Add the beef dripping or sunflower oil, then place the sausages in the tin. Return to the oven and bake for 10–12 minutes until the sausages are browned.
  4. Add the Batter: Quickly and carefully pour the rested batter around the browned sausages while the fat is still sizzling. Avoid opening the oven door once the batter is inside to help it rise properly.
  5. Bake Until Golden: Bake for 25–30 minutes without opening the oven until the batter is puffed up, crisp at the edges, and golden brown.
  6. Prepare Sides: While baking, make your onion gravy and steam your chosen vegetables to balance the richness of the main dish.
  7. Serve: Remove the toad in the hole from the oven and serve immediately while the batter is at its tallest and crispiest. Cut into generous portions, spoon over the onion gravy, and serve with steamed vegetables for a traditional and hearty meal.
