Ingredients
Protein and Vegetables
- 1 tablespoon olive oil (or vegetable or canola oil)
- 1 pound ground chicken
- 4 cloves garlic, minced
- 1/2 sweet onion, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup carrot, shredded
- 1/2 cup finely shredded cabbage
- 3 green onions, chopped
- 1/4 cup fresh cilantro, chopped
Sauces and Seasonings
- 1/3 cup sweet chili sauce (found in the Asian section of the grocery store)
- 1 tablespoon chunky peanut butter (or smooth)
- 1/4 teaspoon freshly grated ginger
- 2 teaspoons low-sodium soy sauce
- Crushed red pepper flakes, to taste
Serving
- Boston Bib lettuce leaves (or romaine lettuce leaves)
Instructions
- Cook the chicken and aromatics: Heat the olive oil in a large skillet over medium heat. Add the ground chicken, minced garlic, chopped onions, salt, and black pepper. Cook, stirring occasionally, until the chicken is fully cooked and no longer pink.
- Add vegetables: Stir in the shredded carrots, shredded cabbage, and chopped green onions. Continue cooking for an additional 4 to 5 minutes, or until the vegetables become tender but still retain some crunch.
- Prepare and add the sauce: In a small bowl, combine the sweet chili sauce, freshly grated ginger, chunky peanut butter, low-sodium soy sauce, and crushed red pepper flakes. Stir this mixture until smooth. Pour it into the skillet with the chicken and vegetables, then add the chopped cilantro. Stir well to fully coat all ingredients with the sauce.
- Assemble and serve: Spoon the chicken and vegetable mixture into individual Boston Bib lettuce leaves. Serve immediately and enjoy the fresh, savory wraps.
Notes
- For a vegetarian version, substitute ground chicken with firm tofu or textured vegetable protein.
- If you prefer less spiciness, reduce or omit the crushed red pepper flakes.
- Sweet chili sauce is available in most grocery stores in the Asian foods section; you can substitute with a simple mix of sweet chili paste and a little honey if unavailable.
- These wraps are best served fresh but can be stored, covered, in the refrigerator for up to 2 days.
- Use Boston Bib lettuce as it is sturdy but tender, holding the filling well without tearing.
