Ingredients
Chicken and Sauce
- 2 lbs. boneless skinless chicken breasts
- 1 oz. packet ranch dressing mix
- 20.75 oz. sweet chili sauce (about 2.5 cups, Panda Express brand recommended)
- 8 oz. cream cheese (Philadelphia brand preferred)
For Serving
- Sliced green onions
- Rice (optional)
- Green vegetables (optional)
Instructions
- Add Chicken: Place the boneless skinless chicken breasts at the bottom of your slow cooker to create the base of the dish.
- Season Chicken: Evenly sprinkle the ranch dressing mix over the chicken breasts for added flavor and seasoning.
- Add Sauce: Pour the sweet chili sauce over the chicken and ranch mix, ensuring the chicken is well coated.
- Add Cream Cheese: Place the block of cream cheese directly on top of the chicken and sauce mixture to melt and blend during cooking.
- Slow Cook: Cover and cook the mixture on LOW heat for 4.5 hours or on HIGH heat for 3.5 hours, until the chicken is thoroughly cooked and tender enough to shred.
- Shred and Stir: Use two forks to shred the cooked chicken in the pot. Stir the softened cream cheese into the sauce and chicken until smooth and creamy.
- Serve: Serve the sweet chili chicken over cooked rice and garnish with sliced green onions. Add a side of green vegetables if desired.
Notes
- Use Philadelphia brand cream cheese for better melting and creaminess.
- Ranch dressing mix adds a unique, tangy flavor that complements the sweetness of the chili sauce.
- Cooking time may vary slightly depending on your slow cooker model.
