Description

This Sushi Brain recipe is a creative and spooky Halloween-themed dish featuring a whole avocado stuffed with chive cream cheese, encased in sushi rice seasoned with traditional sushi seasoning, and topped with thinly sliced smoked salmon arranged to resemble a brain. Finished with a center of vibrant red lumpfish caviar and served with soy sauce, it’s a savory, visually striking treat perfect for sharing during autumn celebrations.


Ingredients

Sushi Rice

  • 1 cup sushi rice
  • 1.5 cups water
  • 2 tablespoons sushi seasoning

Filling

  • 1 large ripe but firm avocado
  • 1-2 teaspoons chive cream cheese

Topping

  • 250g (8.8 oz) thinly sliced smoked salmon
  • 100g (3.5 oz) red lumpfish caviar

Serving

  • Soy sauce (referred to as “Ashes of Vampire” in serving suggestion)


Instructions

  1. Cook Sushi Rice: Rinse the sushi rice several times under cold water until the water runs clear to remove excess starch. Combine the rinsed rice with 1.5 cups of water and cook according to the rice package instructions until tender. Once cooked, stir in 2 tablespoons of sushi seasoning and let the rice cool slightly.
  2. Prepare Avocado: Halve the avocado and carefully remove the seed. Peel the avocado halves and fill the cavity in one half with 1-2 teaspoons of chive cream cheese. Reassemble the avocado halves together to restore its shape.
  3. Assemble Rice Around Avocado: With damp hands, press the seasoned sushi rice evenly around the avocado, fully encasing it. You might have some rice left depending on avocado size. Press down firmly in the center of the rice-covered avocado to create the characteristic grooves of a brain.
  4. Shape and Decorate with Smoked Salmon: Fold thin slices of smoked salmon to create a realistic brain pattern on top of the rice dome. Cover the shaped sushi brain with lightly oiled cling film to help maintain shape.
  5. Add Caviar Center: Place a generous spoonful of red lumpfish caviar in the indentation at the center of the brain-shaped sushi for vivid color and added flavor.
  6. Serve: Present your sushi brain with soy sauce on the side, nicknamed “Ashes of Vampire”, for dipping. Slice the brain into portions to serve and enjoy this spooky, savory Halloween delicacy.
