Description

A delightful and easy-to-make Strawberry Poke Cake featuring a moist white cake infused with strawberry-flavored gelatin and topped with fluffy Cool Whip. This no-fuss dessert is perfect for summer gatherings or anytime you crave a sweet, fruity treat with a creamy finish.

Ingredients

Cake:

  • 1 box white cake mix (follow package instructions for ingredients and measurements)

Gelatin:

  • 1 (3 ounce) box Strawberry Jello

Topping:

  • 8 oz Cool Whip (thawed)

Instructions

  1. Bake the Cake: Preheat your oven and prepare the white cake mix according to the package instructions. Pour the batter into a greased pan and bake as directed. Once done, allow the cake to cool completely to room temperature to ensure the gelatin can properly soak in.
  2. Poke Holes and Add Jello: Using the rounded end of a wooden spoon, gently poke holes evenly across the surface of the cooled cake. Prepare the strawberry gelatin mix according to the package instructions up to the refrigerating step. Instead of refrigerating, immediately pour the prepared gelatin evenly over the cake so that it seeps into the holes. Place the cake in the refrigerator for 4-5 hours or until the gelatin sets firmly.
  3. Add the Cool Whip Topping: Once the gelatin layer has set, carefully spread the thawed Cool Whip evenly over the top of the cake, creating a smooth and creamy finish. Slice, serve, and enjoy this refreshing strawberry poke cake!

Notes

  • Use a wooden spoon or similar utensil to create evenly spaced holes for the gelatin to soak into the cake.
  • Ensure the cake is completely cooled before pouring the gelatin to prevent melting and uneven setting.
  • The refrigeration time is critical for the gelatin to fully set – do not skip or shorten this step.
  • For best results, use fresh Cool Whip and ensure it is fully thawed before spreading.
  • This cake is best served chilled and can be stored in the refrigerator for up to 2 days.
