Filling

- 1/2 cup lemon juice (about 2-3 lemons)

Instructions
- Make the lemon curd: In a medium saucepan over low heat, whisk together the cubed butter, sugar, lemon juice, lemon zest, and a pinch of coarse salt until combined. Add the eggs one at a time, whisking continuously until fully incorporated. Cook over low heat for 8-9 minutes, whisking frequently, until the mixture thickens slightly. Remove from heat and let cool completely. Chill in the refrigerator until ready to use.
- Prepare the pie dough: Preheat the oven to 375˚F (190˚C). In a large mixing bowl, combine the flour, sugar, and sea salt.
