Ingredients

  • 1 pound Florida strawberries, trimmed
  • 1/2 cup loosely packed basil leaves
  • Juice of half a lemon

  • Carbonated water (such as Pellegrino), for serving


Instructions

  1. Prepare the Strawberry Juice: Place the trimmed strawberries in a blender and pulse until smooth. Strain the blended mixture through a fine sieve, using a spatula to press and stir to extract as much juice as possible. Reserve the remaining pulp for other uses.
  2. Measure the Juice: Pour the strained strawberry juice into a liquid measuring cup. Add water to the juice to make the total volume up to 1 cup if it is short.
  3. Combine Ingredients for Syrup: Transfer the strawberry juice to a small saucepan and add the sugar, lemon juice, and basil leaves.
  4. Cook the Syrup: Heat the mixture over medium heat until it begins to boil. Then reduce the heat to a simmer and cook for 5 minutes, stirring frequently to dissolve the sugar and infuse the basil flavor. Remove the pan from heat and allow the syrup to cool.
  5. Strain the Syrup: Pour the cooled syrup through a sieve into a clean container or mason jar to remove the basil leaves and any solids.
  6. Serve the Spritzer: Spoon 2 tablespoons of the strawberry basil syrup into an 8-ounce glass. Top with carbonated sparkling water and stir gently. Adjust the sweetness by adding more syrup if desired. Garnish with minced basil for extra aroma and appearance.
  7. Store the Syrup: Keep the remaining syrup refrigerated; it will stay fresh and flavorful for up to three weeks.
