Ingredients
Chicken
- 1 tablespoon olive oil
- 2 boneless, skinless chicken breasts
- ½ teaspoon sea salt
Sauce
- ¼ cup strawberry jam
- 1 tablespoon good quality balsamic vinegar
- 1 tablespoon water (extra if mixture is too thick)
Garnish
- ¼ cup fresh basil leaves (cut into ribbons or finely chopped)
- 2 tablespoons crumbled goat cheese (optional)
- ¼ cup fresh strawberries (sliced, optional)
Instructions
- Heat oil: Heat olive oil in a medium skillet over medium-high heat to prepare for cooking the chicken.
- Cook chicken: Season chicken breasts with sea salt on both sides. Place them in the hot pan and cook for about 4-5 minutes on one side until a golden crust forms. Flip and cook another 4-5 minutes until fully cooked and no longer pink inside, adjusting time for thickness.
- Mix sauce: While chicken cooks, whisk together strawberry jam, balsamic vinegar, and water in a small bowl to form the sauce.
- Add sauce to chicken: When the chicken is nearly done, pour the sauce mixture over the chicken in the pan, scraping the bottom to release browned bits.
- Simmer sauce: Reduce heat and simmer the sauce for 2-3 minutes until it thickens slightly. Stir in most of the basil leaves and cook for an additional minute.
- Serve: Remove chicken from pan and plate. Spoon the strawberry balsamic sauce over the chicken, sprinkle with crumbled goat cheese if using, and garnish with remaining basil and sliced fresh strawberries.
Notes
- Adjust water in the sauce to achieve desired thickness.
- Use fresh, ripe strawberries for garnishing to enhance the fruity flavor.
- Thicker chicken breasts may require additional cooking time.
- Goat cheese is optional but adds a creamy tang that complements the dish.
- Serve with a side of greens or rice for a complete meal.
