Ingredients

Pistachio Vinaigrette

  • 2 tbsp white wine vinegar
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 2 large cloves garlic, grated
  • 1 tbsp honey
  • ½ cup extra-virgin olive oil
  • 2 oz roasted, salted pistachios, roughly chopped (approximately ¼ heaping cup)

Roasted Root Vegetable Salad

  • 1 ½ lbs golden beets, peeled and ends trimmed
  • 1 lb purple-top turnips, ends trimmed
  • 1 lb long carrots, scrubbed and cut lengthwise
  • ½ lb radishes, halved lengthwise
  • olive oil, for roasting
  • 4 small shallots, thinly sliced
  • 2 oz arugula
  • 1 oz spinach
  • ⅓ cup Greek yogurt
  • 2 tbsp milk


Instructions

  1. Prepare the Vegetables: Preheat your oven to 400°F (200°C). Peel and trim the golden beets, trim the turnips, scrub and cut the carrots lengthwise, and halve the radishes. Toss all the prepared root vegetables with olive oil, kosher salt, and freshly cracked black pepper to ensure even coating.
  2. Roast the Vegetables: Spread the vegetables evenly on a baking sheet in a single layer. Roast in the preheated oven for 35-45 minutes, or until vegetables are tender and slightly caramelized, turning halfway through cooking for even roasting.
  3. Make the Pistachio Vinaigrette: While the vegetables are roasting, whisk together white wine vinegar, lemon zest, lemon juice, grated garlic, and honey in a bowl. Gradually whisk in the extra-virgin olive oil until emulsified. Stir in the roughly chopped roasted, salted pistachios. Season with kosher salt and freshly cracked black pepper to taste.
  4. Prepare the Yogurt Drizzle: In a small bowl, combine the Greek yogurt with milk and whisk until smooth and pourable. Set aside.
  5. Assemble the Salad: Once the vegetables are roasted and slightly cooled, transfer them to a large mixing bowl. Add the thinly sliced shallots, arugula, and spinach. Drizzle with pistachio vinaigrette and toss gently to combine, ensuring the dressing evenly coats the vegetables and greens.
