Description
Celebrate Halloween with this fun and spooky spaghetti recipe featuring pesto-coated noodles adorned with mozzarella ‘eyeballs’ and olive ‘spiders.’ Perfect for a festive and easy-to-make dinner that delights kids and adults alike.
Ingredients
Pasta and Sauce
- 4 quarts water
- 8 ounces dry spaghetti
- 1/2 cup pesto
Decorations
- 16 whole firm pitted black olives
- 12 small mozzarella cheese balls (bocconcini)
- 12 baby basil leaves
Instructions
- Cook the Spaghetti: Bring 4 quarts of water to a rapid boil in a large pot. Optionally, add salt to the water. Add 8 ounces of dry spaghetti and cook according to package directions until al dente. Drain the pasta and rinse briefly with water to prevent sticking.
- Prepare the Eyeballs: Slice 4 firm black olives crosswise into 4 slices each. Select 12 slices with the largest holes. Gently press one olive slice into a small mozzarella ball, creating a spooky eyeball. Repeat for all 12 mozzarella balls.
- Prepare the Spiders: Cut 12 firm black olives lengthwise in half to yield 24 halves. Set aside 8 halves for the spider bodies. Slice the remaining 16 halves crosswise into 4 slices each, making 64 ‘legs.’
- Assemble the Spiders: To build each olive spider on the pasta plate, place an olive half pitted side down as the body. Arrange 4 olive leg slices on each side of the body, curving upwards to mimic spider legs. Make 8 spiders total, placing 2 per serving.
- Toss Pasta with Pesto: Combine the cooked spaghetti with 1/2 cup of pesto sauce until evenly coated.
- Plate and Garnish: Divide the pesto spaghetti evenly onto 4 plates. Top each plate with 3 mozzarella eyeballs and 2 olive spiders. Garnish each serving with 3 baby basil leaves.
- Serve and Enjoy: Present your spooky spaghetti immediately and enjoy this fun and festive Halloween meal.
Notes
- You can salt the pasta water before cooking for enhanced flavor, but it is optional.
- For best presentation, assemble the spiders on the pasta plate just before serving to avoid sogginess.
- Feel free to substitute pesto with your favorite pasta sauce if desired.
- Use firm olives to ensure the spider legs hold their shape properly.
- This recipe is vegetarian friendly.
