Instructions

  1. Prepare rice: Place sushi rice in a strainer and rinse under cold running water until the water runs clear to remove excess starch.
  2. Cook rice: In a medium pot, combine ½ cup uncooked rice with 1 cup water. Bring to a rolling boil over medium-high heat. Once boiling, reduce heat to the lowest setting, cover the pot, and simmer gently for 20 minutes until the rice is tender and water is absorbed.
  3. Heat soup: While the rice cooks, warm the lentil soup either on the stovetop over medium heat or in the microwave until hot.
  4. Prepare nori: Using kitchen scissors, cut the nori sheet into small circles that will serve as pupils for the rice eyeballs. Set these aside.
  5. Shape into eyeballs: When the rice is cooked, fluff it with a fork and allow it to cool just enough to handle safely. Scoop small portions into your palm and gently roll into balls. Place a nori circle onto the center of each rice ball, pressing lightly to adhere.
  6. Fill bowls with soup: Place zucchini noodles (zoodles) at the bottom of each serving bowl as ‘guts’, then ladle the hot lentil soup over the noodles.
