Ingredients
Cookie Dough
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup graham cracker crumbs
- 1 cup chocolate chips
- 1 cup mini marshmallows
Topping
- Extra chocolate chips, to taste
- Extra mini marshmallows, to taste
Instructions
- Preheat oven and prepare pan. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper for easy removal.
- Cream butter and sugars. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, ensuring the sugars are well incorporated for a tender cookie base.
- Add eggs and vanilla. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract to add flavor depth.
- Mix dry ingredients. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt to evenly distribute the leavening agent and salt.
- Combine wet and dry mixtures. Gradually add the dry mixture to the butter mixture, mixing until just combined. Avoid overmixing to keep the bars tender.
- Fold in cookies and chocolate. Gently fold in the graham cracker crumbs and chocolate chips until evenly distributed throughout the dough.
- Layer dough and marshmallows. Spread half of the cookie dough mixture into the prepared baking pan, pressing it down evenly for a solid base layer.
- Add marshmallows. Sprinkle the mini marshmallows evenly over the first cookie layer.
- Top with remaining dough and toppings. Spread the remaining cookie dough gently to cover the marshmallows, then top with additional chocolate chips and mini marshmallows for extra gooeyness and texture.
- Bake. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean, indicating doneness.
- Cool and slice. Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper (if used) and let cool completely on a wire rack before slicing into squares.
- Serve and enjoy. Enjoy your delicious S’mores Cookie Bars with family and friends for a nostalgic and sweet treat.
Notes
- For easier removal, line the baking pan with parchment paper before adding the dough.
- You can substitute semi-sweet chocolate chips with milk or dark chocolate chips based on preference.
- Make sure not to overbake to keep the bars soft and gooey.
- Store leftover bars in an airtight container at room temperature for up to 3 days.
- For a more toasted marshmallow flavor, place the bars under the broiler for 1-2 minutes after baking, watching carefully to prevent burning.
