Description
A flavorful Smoky Crockpot Chili Lime Chicken recipe featuring tender, slow-cooked chicken breasts infused with smoky chipotle, cumin, oregano, and fresh lime juice, perfect for hearty tacos served with cheese and guacamole.
Ingredients
For the crockpot chicken:
- 1/2 small sweet onion (roughly chopped)
- 1 tbsp brown sugar
- 1 tsp dried oregano
- 2 lb boneless chicken breasts (thawed if frozen)
- 4 oz canned diced green chiles
- 1/4 tsp cinnamon
- 1/3 cup mild salsa verde
- 1/2 tsp ground cumin
- 2 canned chipotle chiles in adobo (finely minced)
- 2 tsp smoked paprika
- 1/2 cup water
- 1/2 tsp salt
- 2 garlic cloves (minced)
- 1/2 cup fresh cilantro (chopped, added at end)
- Juice of 1 to 2 fresh limes
For serving:
- Salsa
- Shredded cheese (cotija or Oaxaca blend)
- Guacamole
- 8 soft taco boats (flour or corn tortillas)
Instructions
- Prepare the spice mix and aromatics: Mince the garlic cloves and roughly chop the sweet onion. In a small bowl, combine dried oregano, ground cumin, smoked paprika, cinnamon, and salt to ensure even spice distribution and prevent clumping.
- Layer ingredients in the crockpot: Place the chicken breasts in the crockpot. Add the minced garlic and chopped onion on top. Pour the prepared spice mixture over the chicken, then add brown sugar, salsa verde, canned diced green chiles, finely minced chipotle chiles, and water. Stir to coat the chicken evenly and combine the liquids.
- Slow cook the chicken: Cover the crockpot and cook on LOW for 6-7 hours or HIGH for 4-6 hours. The chicken is ready when it shreds easily with a fork and the sauce is rich and melded. Low heat is preferred for tender, moist chicken and fully developed flavors.
- Shred and finish the chicken: Using two forks, shred the chicken directly in the crockpot into bite-sized pieces. Squeeze in the juice of 1 to 2 fresh limes (starting with one and adjusting to taste). Fold in the chopped cilantro and stir well to distribute the fresh flavors evenly.
- Serve the tacos: Warm the soft taco boats according to package instructions. Spoon the chili lime chicken into each taco, top with shredded cotija or Oaxaca cheese, a hearty dollop of guacamole, and an extra sprinkle of cilantro if desired. Serve immediately while warm, enjoying the softened cheese and vibrant accompaniments.
Notes
- For the best flavor and texture, cook the chicken on LOW for the full 6-7 hours rather than HIGH.
- Adjust the number of chipotle chiles according to your preferred level of heat.
- Use freshly squeezed lime juice for the brightest, most authentic flavor.
- Chicken can be prepared a day ahead and refrigerated, then gently reheated for serving.
- Swap taco boats with corn tortillas for a gluten-free option.
