Description

This sheet pan meal of smoked chicken sausage and roasted vegetables offers a quick, healthy, and flavorful weeknight dinner option. Combining smoky sausage with vibrant, crisp-tender veggies, it’s a versatile recipe perfect for the whole family and pairs well with various sides for a simple yet satisfying meal.

Ingredients

Sausage

  • 4 links smoked chicken sausages (about 12 ounces) – pork sausage or kielbasa can be substituted if smoked

Vegetables

  • 2 heads broccoli (approximately 2 cups chopped)
  • 1 medium bell pepper (red, orange, or yellow preferred; green also acceptable)
  • 1/2 sweet onion (like Vidalia or other large sweet onion)

Seasoning & Oil

  • 8 tablespoons olive oil
  • 1 teaspoon garlic powder or granulated garlic
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 tablespoon oregano
  • 1 tablespoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Other

  • Pan spray (for greasing the sheet pan)

Instructions

  1. Preheat Oven: Set your oven to 425°F (220°C) to warm up while preparing the ingredients to ensure even cooking and proper roasting temperature.
  2. Prepare Baking Sheet: Line a cookie sheet with foil or parchment paper for easy cleanup, then spray it lightly with pan spray to prevent sticking.
  3. Prepare Ingredients: Slice the smoked chicken sausage into pieces. Chop broccoli into bite-sized florets, cut the bell pepper into strips or chunks, and slice the sweet onion into medium pieces. Arrange all sausage and chopped vegetables in a single layer on the prepared cookie sheet.
  4. Season: Drizzle the olive oil evenly over the sausage and vegetables. Sprinkle garlic powder, paprika, onion powder, oregano, dried parsley, salt, and pepper on top. Use your hands or a spatula to mix everything well on the pan, ensuring all pieces are coated with oil and seasonings.
  5. Roast: Place the cookie sheet in the preheated oven and roast for 17 to 22 minutes. Halfway through, around 9-11 minutes, stir or flip the ingredients to promote even cooking and browning. The vegetables should be tender but still crisp, and the sausage heated through.
  6. Serve: Remove from oven and serve the smoked sausage and roasted vegetables hot. This meal pairs well with a variety of sides and can be modified using other smoked sausages or vegetable combinations such as green beans, zucchini, carrots, or mushrooms.

Notes

  • You can substitute smoked pork or turkey sausages if chicken sausage is unavailable.
  • Try swapping in other vegetables like green beans, zucchini, carrots, or mushrooms depending on preference or seasonality.
  • Use parchment paper or foil to make cleanup easier and prevent sticking.
  • Adjust roasting time slightly if your vegetable pieces are larger or smaller than recommended, to maintain crisp tenderness.
  • This recipe is very flexible, making it perfect for using up vegetables in your fridge or tailoring flavors with different seasoning blends.
