Description

This Smashed Tater Tot Potato Salad is a crispy, dairy-free party favorite that combines crunchy smashed tater tots with a tangy vegan mayo-based dressing. Perfect for gatherings, this easy-to-make salad offers a delicious twist on traditional potato salad using vegan ingredients and simple seasonings.

Ingredients

Salad

  • 2 pounds frozen tater tots

Dressing

  • 1 cup vegan mayo
  • 1/2 small red onion, diced
  • 1/2 cup celery, diced
  • 2 cloves garlic, minced
  • 1 tablespoon yellow mustard
  • 2 tablespoons apple cider vinegar
  • 1/4 cup flat leaf parsley, finely chopped
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat and bake tater tots: Line a baking sheet with parchment paper. Spread the frozen tater tots evenly on the sheet. Bake according to package instructions, typically 20 minutes, but cook for 30 minutes to ensure extra crispiness.
  2. Prepare the dressing: While the tots bake, combine vegan mayo, diced red onion, celery, minced garlic, yellow mustard, apple cider vinegar, chopped parsley, garlic salt, and pepper in a large mixing bowl. Stir well to combine, taste and adjust the seasonings if needed. Refrigerate until ready to mix.
  3. Smash the tater tots: Remove the crispy tater tots from the oven. Using a flat object like a thick glass, measuring cup, or another baking sheet, gently press down to smash the tots without crushing them completely.
  4. Toss salad and serve: Add the smashed tater tots to the mixing bowl with the dressing. Toss gently to combine all ingredients thoroughly. Serve immediately for best texture and flavor.

Notes

  • For extra crispy tots, bake for 30 minutes instead of the 20 minutes suggested on most bags.
  • This salad is best served right away because refrigeration causes the tots to become soggy by absorbing the dressing.
