Ingredients

Cooking Fats and Oils

  • 1 can (about 13.5 oz) unsweetened coconut milk

  • 2 teaspoons minced ginger
  • 2 teaspoons minced garlic


Instructions

  1. Brown the Turkey: Heat 2 teaspoons of olive oil or peanut oil in a frying pan over medium-high heat. Add the lean ground turkey and cook for 7-8 minutes until it is nicely browned and all liquid has evaporated. Do not rush this process to ensure depth of flavor.
  2. Prepare Vegetables: While the turkey is cooking, peel the sweet potato and cut it into 1-inch pieces. Remove the seeds and stem area from the red bell pepper and cut it into 1-inch pieces as well.
  3. Transfer Turkey to Slow Cooker: Spray the slow cooker insert with non-stick spray or olive oil. Once the turkey is browned, transfer it into the slow cooker.
  4. Brown the Onion: Add the remaining 1 teaspoon of olive oil to the frying pan and brown the chopped onion. Then add the browned onion to the slow cooker. (If you prefer, you can add the raw onion directly to the slow cooker, but browning enhances flavor.)
  5. Add Vegetables to Slow Cooker: Add the chopped sweet potatoes and red bell pepper to the slow cooker with the turkey and onion.
  6. Prepare the Sauce: In a bowl, mix together the soy sauce, chicken broth, Golden Monkfruit Sweetener, Chili Garlic Sauce, minced ginger, and minced garlic until well combined.
  7. Combine Sauce with Ingredients: Pour the prepared sauce over the turkey and vegetable mixture in the slow cooker. Stir gently to combine everything evenly.
  8. Cook in Slow Cooker: Cover the slow cooker and cook on HIGH for about 2 hours, or until the sweet potatoes are soft when pierced with a fork. You may cook a few minutes longer if needed to achieve tenderness.
  9. Prepare Green Onions: While the stew is cooking, wash and slice the green onions into short pieces.
  10. Add Coconut Milk and Finish Cooking: When the sweet potatoes are tender, add the can of unsweetened coconut milk to the slow cooker. Reduce the heat to LOW and cook for an additional 30 minutes to meld flavors.
  11. Add Green Onions and Serve: Stir in the sliced green onions. Serve the turkey stew hot, optionally over cauliflower rice for a low-carb meal.
