Description

This Pumpkin Custard is a smooth, creamy, and spiced dessert capturing classic pumpkin pie flavors without the crust. Silky and comforting, it is naturally gluten-free and perfect for cozy fall gatherings. With warming spices like cinnamon, nutmeg, and a hint of cloves, this custard offers all the comforting taste of pumpkin pie in a simple, elegant dish.

Ingredients

Custard Ingredients

  • 1 cup pumpkin purée (not pumpkin pie filling)
  • 2 large eggs
  • ½ cup brown sugar
  • 1 cup whole milk (or half-and-half for richer custard)
  • ½ cup heavy cream
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp nutmeg
  • Pinch of cloves (optional)

For Serving (Optional)

  • Whipped cream

Instructions

  1. Preheat the oven: Heat the oven to 325°F (165°C) and arrange 4–6 ramekins in a deep baking dish to prepare for the water bath.
  2. Make the custard base: In a mixing bowl, whisk together pumpkin purée, eggs, brown sugar, milk, heavy cream, vanilla extract, and spices until the mixture is smooth and well combined.
  3. Pour and prep for baking: Evenly divide the custard mixture into the ramekins. Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins, creating a water bath that ensures gentle, even cooking.
  4. Bake: Place the baking dish in the oven and bake for 35–45 minutes, or until the custard is set around the edges but still slightly jiggly in the center for perfect texture.
  5. Cool and serve: Carefully remove the ramekins from the water bath. Cool slightly before serving warm or chill for a firmer custard. Top with whipped cream if desired for an extra indulgent finish.

Notes

  • Do not overbake; the custard should have a gentle jiggle when it is done to keep it silky.
  • The water bath prevents cracking and promotes a smooth, creamy texture.
  • Chilling the custard overnight intensifies its flavors and firms the texture.
  • Serve in small portions as the custard is rich and satisfying.
  • For a dairy-free version, substitute coconut milk instead of whole milk and heavy cream.
  • Adding a splash of maple syrup can enhance sweetness and complexity.
  • Sprinkle cinnamon sugar on top before baking for a caramelized, brûléed crust.
  • For an adult twist, stir in a tablespoon of bourbon or rum.
