Ingredients

Vegetables & Herbs

  • 1.5 lbs fresh broccoli, cut into 1.5-inch uniform florets
  • 3 cloves garlic, minced

Proteins

  • 11 oz chicken sausage, sliced into rounds, Italian-style preferred

Pasta

  • 16 oz frozen cheese tortellini

Dairy

  • 1 cup grated parmesan cheese (about 4 oz), freshly grated preferred

Oils & Seasonings

  • 6 tablespoons olive oil, extra virgin preferred
  • Salt and pepper, to taste
  • Red chili flakes (optional)


Instructions

  1. Preheat Oven and Roast Broccoli: Preheat your oven to 400°F (about 10 minutes). Toss the broccoli florets with minced garlic, 2 tablespoons olive oil, salt, and pepper directly on a sheet pan. Spread in a single layer and roast for 10 minutes until broccoli is bright green with lightly browned edges but still crisp to the fork, developing caramelized flavor.
  2. Increase Oven Temperature and Prepare Mixture: Increase the oven temperature to 450°F and allow it to preheat for 3-5 minutes. Transfer the roasted broccoli to a large bowl and add sliced chicken sausage, frozen tortellini, remaining 4 tablespoons olive oil, and half of the parmesan cheese (about 1/2 cup). Mix thoroughly to combine all ingredients.
  3. Prepare Sheet Pan and Bake: Wipe the sheet pan with olive oil or line it with parchment paper. Spread the broccoli-sausage-tortellini mixture evenly across the pan. Bake for 12-15 minutes until the cheese melts and the edges turn golden brown and crispy. If tortellini appears dry halfway through, drizzle with 1-2 tablespoons of water to retain moisture.
  4. Finish and Serve: Remove from oven and sprinkle the remaining parmesan cheese on top just before serving to add extra cheesy flavor.
