Stew Base
- 2 tablespoons olive oil
- 1/2 cup chopped red onion (or yellow onion, about 1 onion)
- 1 tablespoon minced garlic (about 4 cloves)
- 1/2 teaspoon red pepper flakes
- 1 tablespoon tomato paste
- 2 (15-ounce) cans white beans (such as cannellini), rinsed
- 1 1/2 cups chicken or vegetable stock
- 2 cups baby spinach (optional)
Instructions
- Prepare Herb and Lemon Mixture: Finely chop the parsley and grate the yellow part of the lemon zest using a cheese grater or a lemon zester. Combine them in a small bowl and set aside for garnish.
- Preheat Oven: Preheat your toaster oven or conventional oven to 400°F (200°C) to prepare for roasting the tomatoes.
- Roast Tomatoes: Toss the whole cherry tomatoes with 1/4 cup olive oil directly in a baking pan. Sprinkle with chopped sage (if using), kosher salt, and freshly cracked black pepper. - Add Spinach: If using baby spinach, stir it in during the last couple of minutes of cooking, allowing it to wilt slightly.
