Grape Mixture

- Prepare the Grapes: Heat a sauté pan over medium-high heat. Add the olive oil, rinsed and thoroughly dried grapes, and thyme leaves stripped from the sprig. Make sure the grapes are dry to prevent splattering during cooking.
- Sauté the Grapes: Cook the grapes for 7-10 minutes, stirring occasionally, until they soften and begin to release their juices. Stir in the honey if using, for a lovely touch of sweetness.
- Preheat the Oven: While the grapes cook, preheat your oven to 350 ℉ (175 ℃). Arrange the mini phyllo shells on a baking pan in a single layer for easy filling.
- Prepare the Grape Filling: Remove the sautéed grapes from heat. Gently mash about half of the grapes in the pan to release more juice while leaving the rest whole. This mixture of textures enhances the flavor and presentation.
- Assemble the Appetizers: Spoon approximately one teaspoon of the grape mixture — including one whole grape plus some mashed grapes with their juice — into each mini phyllo shell. Top each with a few crumbles of blue cheese and a sprinkle of toasted chopped walnuts.
- Bake: Place the filled phyllo cups in the oven and bake for 6-8 minutes until the phyllo shells turn golden brown and the blue cheese starts to melt and bubble.
