Ingredients
Roasted Cherries
- 1 pound Northwest-grown sweet cherries (about 3 cups), pitted and halved
- 1 lime, juiced
- 2 tablespoons cane sugar
- 1/2 tablespoon coconut oil
- 1 teaspoon vanilla extract
- Pinch of salt
Yogurt Bowl Assembly
- 4 oz plain Greek yogurt
- 1/4 cup roasted sweet cherries (reserved)
- 1/4 cup granola
- Honey, to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper to prevent sticking and allow easy cleanup.
- Prepare Cherries: Pit the cherries and slice each one in half to ensure even roasting and maximum flavor release.
- Mix Ingredients: In a medium-sized bowl, combine the halved cherries, lime juice, vanilla extract, cane sugar, a pinch of salt, and coconut oil. Stir well to coat cherries evenly with the mixture.
- Spread Cherries: Arrange the cherry mixture in an even layer on the prepared parchment-lined baking sheet to promote uniform roasting.
- Roast Cherries: Place the baking sheet in the oven and roast for 18 minutes. Once done, remove from the oven and let the cherries cool for 5 minutes to slightly caramelize and concentrate their sweetness.
- Assemble Yogurt Bowls: Spoon 4 ounces of plain Greek yogurt into serving bowls. Top with the warm roasted cherries, a sprinkle of granola for crunch, and a drizzle of honey to taste. Serve immediately for the best flavor and texture.
- Storage: Store any leftover roasted cherries in a sealed glass container in the refrigerator. They will keep fresh for up to one week, perfect for quick breakfast additions or snacks.
Notes
- Use fresh, ripe cherries for the best flavor and sweetness.
- Adjust the amount of sugar and honey to your preference, especially if your cherries are very sweet.
- Granola adds a crunchy texture; feel free to substitute with nuts or seeds if desired.
- Greek yogurt can be substituted with plant-based yogurt to make the dish vegan-friendly.
- Ensure cherries are evenly spread on the baking sheet to prevent uneven roasting.
- Leftover roasted cherries can also be used as a topping for pancakes, waffles, or ice cream.
