Description

Roasted Butternut Squash Soup is a warm, velvety soup that highlights the natural sweetness and nutty flavor of butternut squash through roasting. Enhanced with aromatics like onion, garlic, carrots, and celery, then blended to a creamy smooth texture, this comforting soup is seasoned with nutmeg and thyme for a subtle warmth. Perfect for cozy fall and winter meals, it can be made vegan with coconut milk or richer with cream, offering a nourishing and satisfying dish.

Ingredients

Vegetables

  • 1 medium butternut squash, peeled, seeded, and cubed
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped

Liquids & Fats

  • 2 tablespoons olive oil, divided
  • 4 cups vegetable broth
  • ½ cup heavy cream or coconut milk (optional, for creaminess)

Spices & Seasonings

  • Salt and pepper to taste
  • ½ teaspoon ground nutmeg
  • ½ teaspoon dried thyme (or fresh, if preferred)

Instructions

  1. Prepare the Squash: Preheat your oven to 400°F (200°C). Place the cubed butternut squash on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat evenly and spread the cubes in a single layer for even roasting.
  2. Roast the Squash: Roast the butternut squash in the preheated oven for 25 to 30 minutes until tender and slightly caramelized, which enhances its natural sweetness and flavor depth.
  3. Sauté Aromatics: In a large soup pot or Dutch oven, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion, minced garlic, carrot, and celery, cooking for 5 to 7 minutes until the vegetables are softened and fragrant.
  4. Add Spices & Broth: Stir in the ground nutmeg and dried thyme to the sautéed vegetables. Add the roasted butternut squash to the pot, then pour in the vegetable broth. Bring the soup to a gentle simmer and cook for 10 to 15 minutes to let the flavors meld together.
  5. Blend the Soup: Use an immersion blender directly in the pot (or carefully transfer the soup in batches to a stand blender) to blend until the soup is smooth and creamy in texture.
  6. Finish & Serve: If desired, stir in the heavy cream or coconut milk for added richness and creaminess. Taste and adjust seasoning with salt and pepper as needed. Ladle the soup into bowls and serve warm.

Notes

  • Roasting the squash deeply enhances its natural sweetness and flavor complexity.
  • For a smooth soup when blending with a stand blender, process in small batches and be cautious with hot liquids to avoid splashing.
  • Adjust the soup thickness by reducing or adding vegetable broth according to your preference.
  • Use coconut milk for a dairy-free, vegan-friendly creamy option.
  • The soup stores well in the refrigerator for 3 to 4 days and can be frozen for up to 2 months. Reheat gently on the stovetop.
  • Try alternative spices like curry powder, cumin, cinnamon, or smoked paprika to add unique flavors.
  • Serve with crusty bread, garlic bread, or a grilled cheese sandwich for a complete meal.
