Deliciously tender baby back pork ribs served with a flavorful and easy-to-make blueberry BBQ sauce. The ribs are cooked in a pressure cooker for perfect tenderness, then finished under the broiler to caramelize the sauce, creating a perfect balance of smoky, sweet, and tangy flavors in just 35 minutes.


Ingredients

Blueberry BBQ Sauce

  • 1 Tablespoon Olive Oil
  • ½ Cup Onion (Diced)
  • 1 Cup Fresh Blueberries
  • 1 Tablespoon Garlic (Minced)
  • 2 Tablespoons Balsamic Vinegar
  • 2 Tablespoons Honey
  • 1 Tablespoon Maple Syrup
  • 1 Teaspoon Worcestershire Sauce
  • 1 Teaspoon Soy Sauce
  • 1 Teaspoon Mustard
  • 1 Teaspoon Cumin
  • 1 Teaspoon Chipotle Seasoning

  • 1 Rack Baby Back Pork Ribs
  • 1 Cup Chicken Broth


Instructions

  1. Prepare the BBQ Sauce: In a large skillet over medium heat, add olive oil and sauté the diced onions until translucent. Add minced garlic and cook for an additional minute.
  2. Cook Blueberries: Add fresh blueberries to the onion mixture and cook for about 10 minutes, stirring often. Mash the berries with a fork or potato masher to break them down.
  3. Add Seasonings: Stir in the cumin, chipotle seasoning, mustard, Worcestershire sauce, soy sauce, balsamic vinegar, honey, and maple syrup to coat the blueberry mixture thoroughly.
  4. Simmer Sauce: Stir in the remaining ingredients and reduce the heat. Let the sauce cook for around 5 minutes to meld all flavors together.
  5. Puree Sauce: Pour the mixture into a blender and puree for 1 minute until smooth. Strain the sauce if a smoother texture is desired.
  6. Prepare Ribs for Cooking: Remove the membrane from the bottom side of the baby back ribs to ensure tenderness.
  7. Pressure Cook Ribs: Place the metal rack inside your pressure cooker and stand the rack of ribs on their side on the rack. Pour in the chicken broth. Secure the lid, ensuring the vent is closed. Press the Meat button setting and cook for 25 minutes.
  8. Release Pressure: Allow the pressure to release naturally for 10 minutes, then carefully release any remaining pressure manually.
  9. Broil Ribs with Sauce: Transfer ribs to a parchment-lined baking sheet. Generously coat with the blueberry BBQ sauce. Broil for 2 minutes, then apply more sauce and broil for an additional 2-3 minutes to caramelize the sauce.
  10. Serve: Serve the ribs hot with extra blueberry BBQ sauce on the side if desired for dipping.

Notes

  • Removing the membrane from the ribs helps the sauce penetrate and the ribs to be more tender.
  • If you prefer a spicier sauce, increase the chipotle seasoning quantity.
  • The blueberry BBQ sauce can be made ahead and refrigerated for up to 3 days.
  • If you don’t have a pressure cooker, slow-cook ribs in the oven at a low temperature for several hours until tender, then broil with the sauce.
  • Straining the sauce is optional and depends on your desired texture.
