This refreshing Raspberry Mojito Cocktail combines the classic mojito flavors of mint, lime, and rum with a sweet and tangy homemade raspberry syrup, creating an ideal summer drink bursting with fruity and herbal notes.
Ingredients
Raspberry Syrup
- 1 cup Fresh Raspberries
- 1/2 cup Sugar
Single Serving Cocktail
- 2 oz White Rum (4 tablespoons)
- 1 oz Lime Juice (2 tablespoons)
- 5 Fresh Mint Leaves, plus extra for garnish
- 1 tbsp Raspberry Syrup (from above)
- Ice, as needed
- Club Soda, to fill the glass
- 2 Raspberries for garnish
Instructions
- Make the Raspberry Syrup: Place 1 cup of fresh raspberries and 1/2 cup sugar into a small saucepan. Heat over medium heat until the mixture begins to simmer. Allow it to simmer gently for 5 minutes, stirring occasionally to dissolve the sugar and extract the raspberry flavor. Remove from heat and let cool completely. Once cooled, strain the syrup through a fine mesh sieve to remove seeds. Set aside the smooth syrup for use in the cocktail.
- Muddle the Mint Leaves: In the bottom of a glass, gently muddle 5 fresh mint leaves. Be careful to only crush the leaves enough to release their aromatic oils without tearing them apart to avoid bitterness.
- Combine Ingredients: Add 1 tablespoon of the raspberry syrup, 2 ounces of white rum, and 1 ounce of lime juice to the glass with muddled mint. Stir thoroughly to blend the flavors and allow the mint to infuse into the liquid.
- Add Ice and Club Soda: Fill the glass with ice cubes, then top it off with club soda to fill the glass. Stir gently to combine all the ingredients.
- Garnish and Serve: Garnish the cocktail with a few fresh mint leaves and two raspberries on top. Serve immediately and enjoy the refreshing, fruity mojito.
Notes
- Be careful not to over-muddle the mint leaves to prevent bitterness in the drink.
- The raspberry syrup can be made in advance and stored refrigerated for up to a week.
