Ingredients
Wet Ingredients
- ½ cup plain yogurt
- 3 tablespoons vegetable oil
- 1 tablespoon lemon juice
- 2 egg whites
- ½ teaspoon lemon extract (Optional)
Dry Ingredients
- 1 ½ cups all-purpose flour
- ¾ cup white sugar (Optional)
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 teaspoon grated lemon zest
Fruit and Decoration
- 1 cup frozen raspberries
- 2 tablespoons white sugar for decoration (Optional)
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Grease a 12-cup muffin tin or line the cups with paper liners to ensure the muffins don’t stick.
- Mix Wet Ingredients: In a large bowl, combine the plain yogurt, vegetable oil, lemon juice, egg whites, and lemon extract if using. Whisk together until fully blended to create a smooth wet mixture.
- Mix Dry Ingredients: In a separate bowl, stir together the all-purpose flour, sugar, baking powder, salt, and grated lemon zest thoroughly to evenly distribute all dry components.
- Combine Wet and Dry Ingredients: Pour the wet ingredient mixture into the dry ingredients bowl. Gently mix until just blended, careful not to overmix to keep muffins tender.
- Fold in Raspberries: Carefully fold in the frozen raspberries, distributing them evenly throughout the batter without crushing them.
- Fill Muffin Cups and Add Topping: Spoon the batter evenly into the prepared muffin cups. Optionally, sprinkle the tops of the batter with the remaining 2 tablespoons of white sugar for a sweet crust when baked.
- Bake the Muffins: Place the muffin tin in the preheated oven and bake for 15 to 17 minutes, until the muffin tops spring back lightly when touched and are golden.
- Cool: Remove the muffins from the oven and let them cool in the tin on a wire rack before serving to set the texture and flavor.
Notes
- You can substitute raspberries with blueberries, strawberries, peaches, or cherries—fresh or frozen.
- Use any plain yogurt without fruit at the bottom; Greek yogurt can be used but might make muffins denser.
- Omitting or reducing sugar in the batter is possible if you prefer less sweetness.
- Do not overmix the batter to maintain the muffins’ light and tender crumb.
- Use paper liners for easier cleanup and removal of muffins.
- Ensure frozen raspberries are gently folded in to prevent color bleeding into the batter.
