Description

This Pumpkin White Bean Chili is a hearty and flavorful twist on classic chili, featuring lean ground turkey, creamy cannellini beans, and rich pumpkin puree enhanced by aromatic spices and a splash of pumpkin beer. Perfectly balanced with a mild heat from poblano and jalapeño peppers, this chili simmers to a comforting, thick consistency great for chilly days or anytime you crave a nutritious, satisfying meal.

Ingredients

Main Ingredients

  • 2 tablespoons olive oil
  • 1 medium red onion, diced
  • 3 poblano peppers, diced
  • 1 jalapeño pepper, minced
  • 4 cloves garlic, minced
  • 2 teaspoons kosher salt
  • 1 ¼ pounds ground turkey (93% lean)
  • 2 tablespoons chili powder
  • ½ tablespoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • 12 ounces pumpkin beer
  • 1 15-ounce can pumpkin puree
  • 2 cups low-sodium chicken stock
  • 2 15-ounce cans cannellini beans, drained and rinsed

Instructions

  1. Sauté aromatics: Heat olive oil in a large Dutch oven or pot over medium heat. Add diced red onion, poblano peppers, jalapeño, minced garlic, and kosher salt. Sauté for 5-7 minutes until vegetables soften and start turning brown, releasing their flavors.
  2. Cook the ground turkey: Push vegetables to the side of the pot and add the ground turkey. Break the meat into small pieces with a wooden spoon and cook for approximately 5 minutes until no longer pink.
  3. Season the turkey: Sprinkle chili powder, cumin, onion powder, garlic powder, smoked paprika, and cayenne pepper over the cooked turkey. Sauté for an additional 1-2 minutes to bloom the spices and infuse the meat.
  4. Deglaze with pumpkin beer: Lower heat to medium-low and pour in the pumpkin beer. Scrape the bottom of the pot to lift any browned bits. Let the beer simmer and reduce for about 5 minutes to concentrate the flavor.
  5. Add pumpkin puree, stock, and beans: Whisk in the pumpkin puree until smooth and well combined. Add low-sodium chicken stock and drained cannellini beans, stirring thoroughly to incorporate all ingredients evenly.
  6. Simmer the chili: Bring the mixture to a gentle simmer. Allow to cook uncovered for 10-15 minutes until the chili thickens to your desired consistency. Taste and adjust seasoning as needed.
  7. Garnish and serve: Serve hot garnished with your choice of toppings such as shredded cheese, chopped cilantro, or a dollop of sour cream for added richness and freshness.

Notes

  • For a spicier chili, add more jalapeño or cayenne pepper to taste.
  • Use low-sodium chicken stock to better control the salt level in the chili.
  • Ground turkey can be substituted with ground chicken or beef if preferred.
  • Ensure beans are well-drained and rinsed to reduce excess starch and sodium.
  • Garnish options like avocado slices or green onions also complement the flavors well.
  • This chili freezes well; allow it to cool completely before freezing in airtight containers.
