These Pumpkin Patch Cookie Cups are a festive and fun treat perfect for Halloween or fall gatherings. Made with refrigerated chocolate chip cookie dough baked into mini muffin cups, each cookie cup is topped with a melted Reese’s Peanut Butter Cup and decorated with green icing to resemble grass, crowned with a candy pumpkin for a charming pumpkin patch effect.

- 24 Reese’s Peanut Butter Cup Miniatures, unwrapped
- 24 Mellowcreme Pumpkins
- Green decorator icing
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready once the cookie cups are assembled.
- Prepare Muffin Cups: Spray mini-muffin cups with non-stick spray or grease them to prevent sticking and allow easy removal of the cookie cups after baking.
- Portion Cookie Dough: Cut the cookie dough roll into 6 even rounds, then cut each round into 4 pieces, making 24 pieces total. Drop each piece into a mini-muffin cup, spreading slightly to form a base.
- Bake Cookie Cups: Bake the cookie dough in the preheated oven for 15 to 18 minutes until the cookies are puffy and golden brown.
- Insert Peanut Butter Cups: Remove the tray from the oven and immediately press one Reese’s Peanut Butter Cup Miniature into the center of each cookie cup, gently pressing down to form a slight cup shape.
- Cool: Allow the cookie cups to cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.
- Decorate: Once cooled, pipe green decorator icing in the center of each cookie cup to resemble grass. Place one candy pumpkin on top of the icing in the center, completing the pumpkin patch look.
- Serve and Enjoy: Serve the cookie cups at parties or as festive treats. Yield is 24 cookie cups.
