Description

These Pumpkin Pasties are delightful handheld pastries filled with a spiced pumpkin mixture, perfect for a quick autumn treat or festive gathering. Featuring a flaky pie crust enveloping a sweet and warmly seasoned pumpkin filling, these pasties bake to a golden crisp in under 15 minutes.

Ingredients

Filling

  • 1 cup pumpkin puree
  • 4 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg

Dough & Topping

  • 2 refrigerated pie crusts (room temperature)
  • 1 egg
  • 1 tablespoon granulated sugar

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 450 degrees Fahrenheit. Line a baking sheet with parchment paper and set it aside, ensuring your baking surface is ready for the pasties.
  2. Make Pumpkin Filling: In a medium-sized bowl, combine the pumpkin puree, brown sugar, cinnamon, ground ginger, ground cloves, and nutmeg. Mix thoroughly until all spices and sugar are evenly incorporated, forming a flavorful filling.
  3. Prepare Pie Dough Circles: Roll out the refrigerated pie crust on a clean surface. Use a glass or cutter to cut out small circles from the dough, arranging them on your prepared baking sheet carefully without overlapping.
  4. Fill the Pasties: Using a tablespoon, scoop one heaping tablespoon of pumpkin filling onto the center of each dough circle, careful not to overfill to prevent leakage.
  5. Seal the Pasties: Fold each dough circle over the filling to create a half-moon shape. Pinch the edges firmly with a fork to seal the pasties completely.
  6. Add Decorative Slits: With a sharp knife, cut a small lightning bolt-shaped slit on the top of each pastie. This allows steam to escape while baking and adds a decorative touch.
  7. Prepare Egg Wash: In a small bowl, beat one egg vigorously, then add one teaspoon of water and continue whisking until well combined to create a smooth egg wash.
  8. Brush and Sugar: Lightly brush the egg wash over the top of each pastie. Sprinkle granulated sugar evenly on top for additional sweetness and a subtle crunch.
  9. Bake to Golden Perfection: Place the baking sheet in the preheated oven and bake the pasties for 5 to 6 minutes, or until they turn a beautiful golden brown color. Remove from oven and let cool slightly before serving.

Notes

  • Ensure pie crust is at room temperature for easier rolling and shaping.
  • Do not overfill the pasties to avoid leakage during baking.
  • Use a sharp knife for neat decorative cuts on top and to allow steam escape.
  • Serve warm for best taste; these pasties can also be reheated in the oven.
  • For a vegan alternative, substitute egg wash with plant-based milk or a mixture of maple syrup and water.
