Ingredients

Potatoes and Seasoning

  • 3 pounds Yukon gold or russet potatoes, washed, peeled, cut into 2-inch cubes
  • 3-4 cloves garlic, whole, peeled
  • Salt, to taste
  • Freshly cracked white or black pepper, to taste

Dairy

  • 6 tablespoons cold butter, cut into small pieces, divided
  • ½ cup milk of choice, at or close to room temperature (whole milk preferred)
  • 1 ½ cups heavy cream, at or close to room temperature

Optional

  • ⅓ cup shredded gruyère, Swiss, comté, or mozzarella cheese
  • Finely chopped fresh chives, for garnish


Instructions

  1. Preheat oven: Preheat your oven to 300° Fahrenheit to ensure it’s ready for the baking step later in the recipe.
  2. Boil potatoes and garlic: Place the cubed potatoes and whole garlic cloves in a large pot. Cover them with cold water, sprinkle a pinch of salt on top, and bring to a boil over medium-high heat. Once boiling, reduce heat to low and simmer for about 15 minutes or until the potatoes are easily pierced with a fork.
  3. Drain and dry: Drain the potatoes and garlic in a colander well. Return them to the warm pot off the heat to evaporate excess moisture and keep warm.
  4. Rice the potatoes: Using a potato ricer, press the cooked potatoes and garlic in batches into a large bowl. Add 3 to 4 pieces of butter during this process, totaling 5 tablespoons, and set the riced potatoes aside carefully to avoid overflow in the ricer.
  5. Warm the dairy: In a small pot over medium heat, warm the milk and heavy cream mixture for 3-4 minutes while whisking continuously to blend the ingredients without boiling.
  6. Combine potatoes with dairy: Gradually whisk the warm milk and cream into the riced potatoes, adding it slowly to create a smooth and fluffy texture. Season with salt and freshly cracked pepper to taste.
  7. Add cheese (optional): Fold in the shredded cheese gently with a silicone spatula until evenly incorporated, if using.
  8. Prepare baking dish: Place the remaining 1 tablespoon of butter evenly across the bottom of a baking dish to prevent sticking and add richness.
  9. Transfer and spread potatoes: Spoon the potato mixture into the baking dish, spreading evenly to cover the butter and fill all corners for uniform baking.
  10. Bake: Place the dish in the preheated oven and bake uncovered for 20 to 25 minutes until cooked through and slightly golden on top.
  11. Garnish and serve: Remove from the oven carefully, garnish with finely chopped fresh chives, and serve immediately for the best creamy texture and flavor.

  • Using whole milk is preferred as it adds richness, but any milk of choice can be substituted.
  • If you don’t have a potato ricer, a fine masher or food mill can be used, but texture may vary.
  • The cheese is optional but adds a pleasant depth of flavor and creaminess.
  • Ensure the dairy mixture is warmed but not boiled to avoid curdling and maintain smoothness.
  • Yukon gold potatoes will give a creamier texture, while russets provide a fluffier mash.
