This Pineapple Pink Lemonade Drink is a refreshing and vibrant summer beverage combining the tropical sweetness of ripe pineapple with the tangy brightness of fresh lemon juice and a splash of cranberry juice for a beautiful pink hue. Perfectly sweetened with a homemade simple syrup, this drink is chilled and served over ice, making it an ideal thirst quencher for warm days.
Ingredients
Fruit Base
- 1 large ripe pineapple, peeled, cored, and chopped
- 8 cups water, divided
- 1½ cups fresh lemon juice (about 8-10 lemons)
- ½ cup cranberry juice cocktail (for the pink color, adjust to your liking)
Sweetener
- 1½ cups granulated sugar

Instructions
- Prepare the Pineapple Base: Place the chopped pineapple and 4 cups of water in a large saucepan. Bring the mixture to a boil over medium-high heat, then reduce the heat to low. Cover and simmer gently for 20 to 25 minutes, allowing the pineapple flavor to infuse into the water.
- Strain the Pineapple Liquid: Remove the saucepan from heat and let it cool slightly. Pour the pineapple mixture through a fine-mesh sieve or cheesecloth-lined colander into a large bowl. Press down on the pineapple pulp to extract as much liquid as possible. Discard or save the pulp for other uses. Set the pineapple-infused water aside.
- Make the Lemon Simple Syrup: In another saucepan, combine the remaining 4 cups of water with 1½ cups of granulated sugar. Heat over medium heat, stirring continuously until the sugar fully dissolves. Remove from heat and let the syrup cool completely.
- Combine Ingredients: In a large pitcher, mix the cooled pineapple-infused water, cooled simple syrup, and fresh lemon juice. Add ½ cup of cranberry juice cocktail and stir well to achieve the desired pink color and flavor. Adjust by adding more cranberry juice if deeper pink color or flavor is preferred.
- Adjust the Flavor: Taste the lemonade and balance the sweetness or tartness by adding additional simple syrup if it’s too tart or more lemon juice if it’s too sweet. Stir thoroughly to combine.
- Chill the Lemonade: Cover the pitcher and refrigerate for at least 2 hours, or longer if possible, to allow the flavors to meld and the drink to cool thoroughly.
- Serve the Drink: When ready to serve, fill glasses with ice cubes and pour the chilled Pineapple Pink Lemonade over the ice.
