Description

These peach pie overnight oats combine fresh, juicy peaches with warm spices to create a delicious and nutritious breakfast that tastes just like peach pie. Made with wholesome ingredients like rolled oats, almond milk, chia seeds, and natural sweeteners, this recipe is easy to prepare and perfect for busy mornings.

Ingredients

Oats Mixture

  • ½ cup old fashioned rolled oats
  • ¾ cup almond milk
  • 1-2 teaspoons maple syrup, honey, or preferred sweetener
  • 1 teaspoon chia seeds
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground ginger
  • 2 tablespoons chopped peaches + extra for topping

Instructions

  1. Combine Ingredients: In a half-pint mason jar, add the oats, almond milk, sweetener, chia seeds, vanilla, cinnamon, ginger, and chopped peaches. Stir the mixture well to combine all the ingredients evenly. Then, place the lid on the jar and shake it gently to ensure thorough mixing.
  2. Refrigerate Overnight: Place the jar in the refrigerator overnight for at least 8 hours to allow the oats and chia seeds to soak and absorb the liquid, creating a creamy, thick texture. If you are short on time, refrigerate for a minimum of 30-60 minutes.
  3. Serve: Remove the lid from the jar and top the oats with additional fresh chopped peaches. You can enjoy the oats directly from the jar or pour them into a bowl for serving.
  4. Storage: Store leftover overnight oats in a sealed airtight container in the refrigerator, where they will keep fresh for up to 5 days.

Notes

  • Maple syrup can be substituted with honey or any other natural liquid sweetener of your choice.
