Description

Parmesan Lemon Chicken is a quick and flavorful dish featuring tender chicken breasts coated in a savory parmesan and garlic crust, sautéed to golden perfection, and bathed in a tangy lemon-parmesan sauce. With a prep and cook time of just 30 minutes, this easy skillet recipe is perfect for a delicious weeknight dinner that serves four.

Ingredients

For the Chicken

  • 3 tablespoons all-purpose flour
  • ¼ cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 large boneless, skinless chicken breasts (cut in half lengthwise to form four pieces)

For Cooking

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter

For the Parmesan Lemon Sauce

  • 2 teaspoons minced garlic
  • ¾ cup chicken broth
  • ¼ cup lemon juice (or juice from 2 large lemons)
  • 2 tablespoons grated parmesan cheese

Instructions

  1. Prepare the Chicken: In a shallow bowl or dish, combine the flour, grated parmesan cheese, garlic powder, salt, and black pepper. Dredge each piece of chicken thoroughly on both sides in this flour mixture and set them aside to coat evenly.
  2. Cook the Chicken: Heat olive oil and unsalted butter in a large skillet over medium heat until the butter is fully melted. Add the coated chicken pieces to the skillet and cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through, reaching an internal temperature of 165℉. Once cooked, transfer the chicken to a separate plate and set aside.
  3. Make the Parmesan Lemon Sauce: In the same skillet, add minced garlic and sauté for approximately 30 seconds until fragrant. Pour in the chicken broth and lemon juice, stirring to combine. Bring this mixture to a boil, then lower the heat to a simmer and cook gently for 3-4 minutes to reduce slightly.
  4. Finish the Sauce and Combine: Stir grated parmesan cheese into the sauce until it melts and incorporates smoothly. Return the cooked chicken pieces to the skillet and spoon the sauce over them to coat evenly. Heat for an additional 1-2 minutes until the chicken is warmed through.
  5. Serve: Serve the parmesan lemon chicken immediately, spooning extra sauce over the chicken for maximum flavor.

Notes

  • For extra zest, garnish with fresh lemon slices or chopped parsley.
  • Use fresh lemon juice for the best flavor in the sauce.
  • Make sure chicken pieces are of even thickness for uniform cooking.
  • Internal temperature for cooked chicken should always reach 165℉ for safety.
  • Leftovers can be stored in the refrigerator for up to 2 days and reheated gently on the stovetop.
