Instructions

  2. Cook vegetables: Add sliced zucchini, julienned carrots, sliced red bell pepper, and halved cherry tomatoes to the skillet. Cook for 3–4 minutes until they are slightly softened but still vibrant.
  3. Add pasta and broth: Stir in the uncooked penne pasta, vegetable broth, and a pinch of salt. Bring the mixture to a boil over medium-high heat, then reduce the heat to maintain a simmer. Cook uncovered for 10–12 minutes, stirring occasionally to prevent sticking, until the pasta is al dente and most of the liquid is absorbed.
  4. Add spinach and peas: Once the pasta is nearly done, stir in the fresh spinach and green peas. Cook for another 2–3 minutes until the spinach wilts and the peas are heated through.
  5. Finish with cream and cheese: Add the heavy cream, grated Parmesan cheese, and lemon juice. Stir well and let the mixture simmer for 1–2 minutes until the sauce becomes creamy and coats the pasta and vegetables evenly.
