Description

This recipe uses simple ingredients and is easy to make, adding a healthy twist with spinach while keeping the comforting flavor kids and adults love.


Ingredients

Macaroni and Cheese

  • 1 box macaroni and cheese
  • ¼ cup milk
  • 4 Tbsp butter
  • 1 cup fresh spinach

Monster Eyes

  • Cheese sticks (quantity as needed for eyes)
  • Black olives (quantity as needed for eyes)


Instructions

  1. Boil Macaroni: Bring a pot of water to a boil and cook the macaroni from the box according to package instructions until soft. Drain well.
  2. Mix Cheese and Butter: Return drained macaroni to the pot, add butter and the cheese packet from the box, stirring until fully melted and coated.
  3. Prepare Spinach Mixture: In a blender, combine 1 cup of fresh spinach and ¼ cup milk. Blend until smooth and vibrant green.
  4. Combine Spinach and Macaroni: Pour the spinach mixture into the mac and cheese. Stir thoroughly until the pasta is evenly colored and mixed.
  5. Make Monster Eyes: Slice cheese sticks into small rounds or oval shapes for eyes. Using a drinking straw, poke a hole through each cheese slice. Similarly, poke holes through the black olives. Insert an olive into each cheese slice hole to form an eye.
  6. Assemble and Serve: Place the monster eyes on top of bowls or plates of the green mac and cheese to create a fun monster look. Serve immediately and enjoy!
