Easy to make and irresistibly cute, these bite-sized cheesecakes are sure to be a hit at any Halloween party.

Ingredients

Crust

  • 2 cups Chocolate sandwich cookies (crushed)
  • 2 Tbsp. Butter (melted)

Cheesecake Filling

  • 16 oz. Cream cheese (softened)
  • 1 cup Sugar
  • 3 Eggs
  • 2 Tbsp. Flour
  • 1 1/2 tsp. Vanilla
  • 20 drops Green food coloring

Decoration

  • 32 Edible Eyes
  • 1 cup Chocolate (melted)
  • 1 cup Chocolate Sprinkles
  • 32 Chocolate Chips

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the cheesecakes.
  2. Prepare Crust: Melt the butter and combine it thoroughly with the crushed chocolate sandwich cookies to create the crust mixture.
  3. Form Crust Base: Shape the cookie mixture into 1-inch balls and place each into the mini cheesecake pan wells.
  4. Press Crust: Use a tamper or the back of a spoon to firmly press down each ball to form an even crust base in each pan cavity.
  5. Mix Cheesecake Filling: In a mixing bowl, beat the softened cream cheese, sugar, eggs, and vanilla extract until the mixture is smooth and fully combined.
  6. Add Flour: Slowly incorporate the flour into the cheesecake mixture, mixing well to avoid lumps and ensure a smooth batter.
  7. Add Coloring: Add 20 drops of green food coloring or adjust until your desired shade is reached to give the cheesecakes a spooky hue.
  8. Fill Tins: Pour the cheesecake mixture over the cookie crusts in each tin, filling them almost to the top but leaving a small gap for rising.
  9. Bake: Place the pan in the oven and bake for 15 minutes until the cheesecakes are set around the edges but slightly jiggly in the center.
  10. Cool: Remove from oven and allow the cheesecakes to cool completely to room temperature before decorating.
  11. Decorate Preparation: Melt the chocolate chips in the microwave in short bursts, stirring between to avoid burning.
  12. Dip Tops: Carefully remove cheesecakes from their pan and dip the top of each into the melted chocolate followed immediately by a coat of chocolate sprinkles.
  13. Add Features: Use a piping bag or small plastic bag with a cut tip to pipe melted chocolate onto the cheesecakes forming mouths and other Halloween-themed decorations.
  14. Attach Eyes and Bolts: Dab a small dot of melted chocolate on the back of each edible eye and chocolate chip, then press them onto the cheesecakes to resemble eyes and neck bolts, securing them in place.

Notes

  • Ensure the cream cheese is softened to room temperature for smooth mixing.
  • Use a mini cheesecake pan for perfectly sized bite-sized portions.
  • If you don’t have green food coloring, you can adjust with other colors or omit for a classic cheesecake look.
  • To prevent cracking, do not overbake the cheesecakes; they should remain slightly jiggly in the center when removed.
  • Allow cheesecakes to cool completely before decorating to keep the toppings intact.
  • Store finished cheesecakes in the refrigerator in an airtight container for up to 3 days.
