Ingredients

Crust

  • 1 1/2 cups graham cracker crumbs

Cheesecake Filling

  • 2/3 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/3 cup sour cream

Blackberry Topping

  • 1 cup fresh blackberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Instructions

  1. Prepare the crust: Preheat your oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly moistened. Press about one tablespoon of the mixture firmly into the bottom of each mini cheesecake pan or a muffin tin lined with paper cups. Set aside.
