Ingredients

Corn Mixture

  • 40 oz Frozen Corn
  • 2/3 cup Mayonnaise
  • 2/3 cup Sour Cream
  • 1 1/2 tsp Chili Powder (divided)
  • 3/4 tsp Garlic Powder
  • 1/2 tsp Salt
  • 4 oz Queso Fresco, crumbled

Topping

  • 2 oz Queso Fresco, crumbled
  • Dried Cilantro, chopped (for garnish)


Instructions

  1. Preheat the oven: Preheat your oven to 350 degrees Fahrenheit and prepare a 9 x 13-inch baking pan by spraying it with non-stick spray to prevent sticking.
  2. Mix ingredients: In a large bowl, combine the frozen corn, mayonnaise, sour cream, 1 1/2 teaspoons of chili powder (reserve 1/2 teaspoon for topping), garlic powder, salt, and 4 ounces of crumbled queso fresco. Mix thoroughly to ensure even distribution of all ingredients.
  3. Transfer to baking dish: Pour the corn mixture into the prepared baking pan and spread it evenly across the surface to create a uniform layer.
  4. Top with spices and bake: Sprinkle the remaining 1/2 teaspoon of chili powder evenly over the top of the corn mixture. Place the pan in the oven and bake for 35 to 40 minutes, or until the casserole is bubbly around the edges and heated through.
