Ingredients

Noodles

  • 8 oz fideo pasta (or vermicelli, angel hair pasta)

Tomato Sauce

  • 2 small tomatoes (or ½ cup of canned tomato sauce)
  • ½ medium onion
  • 1 small garlic clove
  • 1 cup chicken stock (from the total below, used for blending)

Broth and Seasoning

  • 3 ¼ cups chicken stock (or water + 3 tsp chicken bouillon to make total 4 ¼ cups)
  • 3 Tbsp canola oil
  • Salt to taste


Instructions

  1. Prepare the tomato blend: Cut the tomatoes in half and place them along with the onion and garlic into a blender. Add 1 cup of chicken stock and blend until you achieve a smooth puree.
  2. Toast the pasta: Preheat the canola oil in a large saucepan over medium heat. Add the fideo pasta and stir constantly to coat the noodles with oil. Continue cooking until the pasta turns a nice golden brown, releasing a nutty aroma.
  3. Add the tomato sauce: Pour the blended tomato mixture into the saucepan with the toasted pasta. Let it sizzle for about 30 seconds while stirring continuously to meld the flavors.
  4. Simmer the soup: Add the remaining 3 ¼ cups of chicken stock to the saucepan and season with salt. Bring the mixture to a boil, then reduce the heat to low and let it simmer for approximately 10 minutes, or until the fideo pasta is tender and fully cooked.
