Ingredients
For the Pizza Base:
- 4 small flour tortillas
- 4 small corn tortillas
- 2 tbsp vegetable oil
For the Filling:
- 1 lb (450g) ground beef or turkey
- 1 packet taco seasoning (or homemade: 1 tsp chili powder, ½ tsp cumin, ½ tsp paprika, ¼ tsp garlic powder, salt & pepper)
- ¼ cup water
For the Toppings:
- 1 cup refried beans
- 1 cup shredded cheddar or Mexican blend cheese
- ½ cup diced tomatoes
- ¼ cup sliced black olives (optional)
- ¼ cup chopped green onions
- Sour cream, for serving
- Salsa, for serving
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the pizza and melting the cheese perfectly.
- Cook Beef: In a skillet over medium heat, brown the ground beef (or turkey) until fully cooked. Drain any excess fat, then stir in the taco seasoning and ¼ cup water. Let it simmer for about 5 minutes until the mixture thickens and is flavorful.
- Fry Corn Tortillas: Heat vegetable oil in a pan and lightly fry each corn tortilla until crispy. Once fried, place them on paper towels to drain the excess oil.
- Assemble Base: Take each flour tortilla and spread a thin layer of refried beans over it. Then, add a generous amount of the seasoned beef mixture on top, followed by placing one crispy fried corn tortilla over the beef layer.
- Add Cheese and Bake: Sprinkle shredded cheddar or Mexican blend cheese over the top of the layered tortillas. Place the assembled pizzas on a baking sheet and bake in the preheated oven for 5–7 minutes or until the cheese is fully melted and bubbly.
- Add Fresh Toppings: Remove the pizzas from the oven and immediately top with diced tomatoes, sliced black olives, and chopped green onions to add freshness and texture.
