Description

This Keto Chicken Alfredo Casserole is a creamy, low-carb comfort dish combining tender chicken, fresh broccoli, and a rich homemade Alfredo sauce baked to golden perfection. Perfect for a satisfying and easy keto-friendly meal.

Ingredients

Protein

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces

Dairy & Sauce

  • 1 cup heavy cream, room temperature
  • 1 cup freshly grated Parmesan cheese

Vegetables & Seasonings

  • 2 cups broccoli florets, cut into bite-sized pieces
  • 1 tsp garlic powder (or substitute with fresh minced garlic)
  • Salt and pepper, to taste

Others

  • Butter or high-heat oil, for greasing the baking dish

Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish with butter or high-heat oil to prevent sticking.
  2. Cook the chicken: Season the bite-sized chicken pieces with salt and pepper. Heat a skillet over medium-high heat and cook the chicken until no longer pink inside, about 5–7 minutes. Remove the cooked chicken from the pan and set aside.
  3. Blanch the broccoli: Bring a pot of water to a boil. Add the broccoli florets and blanch for 2 minutes. Quickly drain and rinse under cold water to stop the cooking process and maintain vibrant color.
  4. Make Alfredo sauce: In the same skillet used for chicken, reduce heat to medium-low and bring the heavy cream to a gentle simmer. Gradually whisk in the freshly grated Parmesan cheese until melted and smooth. Add garlic powder, salt, and pepper, stirring continuously until the sauce thickens slightly, about 3–5 minutes.
  5. Assemble the casserole: In the prepared casserole dish, layer the cooked chicken evenly, then add the blanched broccoli. Pour the creamy Alfredo sauce over the top, making sure all ingredients are well coated.
  6. Bake: Place the casserole in the preheated oven and bake for 15–20 minutes, until the sauce is bubbling and the top starts to turn golden. For an extra browned top, optionally broil for 2 minutes at the end of baking.
  7. Rest and serve: Remove the casserole from the oven and let it rest for 5 minutes before serving, allowing the flavors to meld and the casserole to set slightly.

Notes

  • Ensure the chicken is cooked through before removing it from the skillet to avoid undercooked meat.
  • Blanching the broccoli briefly keeps it tender-crisp and vibrant in color.
  • Using freshly grated Parmesan cheese is key for a smooth, flavorful Alfredo sauce.
  • Broiling at the end is optional but adds a delicious golden finish.
  • This casserole can be prepared in advance and refrigerated before baking.
  • Adjust seasoning to taste, especially salt and pepper, depending on the saltiness of your Parmesan cheese.
