Description

This Keto Broccoli Cheese Soup is a creamy, satisfying low-carb recipe perfect for those following a ketogenic lifestyle. Packed with fresh broccoli, sharp cheddar, and rich cream cheese, it delivers comfort and flavor in every spoonful. Ready in just 35 minutes, this soup is ideal for a quick lunch or dinner that fits keto macros.

Ingredients

Vegetables

  • 2.5 cups chopped broccoli
  • 3 ounces shredded carrots
  • 1/2 diced onion
  • 3 cloves chopped garlic (or 1 tablespoon minced garlic as a substitute)

Dairy & Fats

  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • 4 ounces full fat cream cheese
  • 1 cup shredded sharp cheddar cheese (112g)

Broth & Seasonings

  • 1 cup chicken broth
  • Salt, to taste
  • White pepper, to taste

Instructions

  1. Prepare vegetables: Dice the onion and chop the broccoli roughly or finely according to your preference.
  2. Sauté aromatics: In a large pot over medium-high heat, melt the butter and add the diced onion. Cook until fragrant, then add the chopped garlic. For best flavor, you can grate fresh garlic over the soup in a later step before covering.
  3. Add liquids and dairy: Pour in the chicken broth, reduce heat, and bring to a simmer. Stir in the cream cheese and heavy cream until smooth.
  4. Cook vegetables: Add the chopped broccoli and shredded carrots to the pot. Bring back to a gentle simmer and cover. Check every few minutes to maintain a slow simmer and to test the tenderness of the broccoli.
  5. Finish with cheese and seasoning: Once the broccoli is tender, stir in the shredded sharp cheddar cheese until melted. Season with salt and white pepper to taste. Serve the soup hot for best flavor and texture.

Notes

  • You can substitute chopped garlic with minced garlic if preferred.
  • Grating garlic directly into the pot before covering enhances garlic flavor.
  • Adjust seasoning at the end to suit your taste.
  • For a thicker soup, blend a portion of the soup before adding the shredded cheese.
  • This soup keeps well refrigerated for up to 3 days and can be reheated gently on the stovetop.
