Description

Transform Halloween party appetizers with these spooky Jack-o-lantern sushi heads made from sushi rice infused with carrot juice and orange juice. Decorated with green bean tips and black olives, they are a fun, festive, and easy-to-make dish perfect for Halloween celebrations.


Ingredients

Rice Base

  • 250g sushi rice
  • 300ml carrot juice
  • Juice of ½ orange
  • ½ tsp ground cumin
  • ¼ tsp salt

Decorations

  • 16 green bean tips
  • 2 pitted black olives


Instructions

  1. Prepare Rice Mixture: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Combine the rinsed rice with 300ml of carrot juice, the juice of half an orange, ½ teaspoon ground cumin, and ¼ teaspoon salt in a pot suitable for steaming. Mix gently to integrate the flavors.
  2. Cook Rice: Steam or cook the rice on the stove according to sushi rice cooking instructions, allowing the rice to absorb the carrot and orange juices while cooking. Once cooked, let it cool completely to room temperature to set the shape and flavor.
  3. Shape Sushi Heads: Once cooled, shape the rice mixture into small rounded pumpkin shapes resembling Jack-o-lantern heads. Firmly compact the rice to ensure the heads hold their form.
  4. Add Green Bean Stems: Attach one green bean tip to the top center of each rice ball as the Jack-o-lantern stem, pressing gently so they stay in place.
  5. Create Facial Features: Using the pitted black olives, cut or tear pieces to form facial features such as eyes, nose, and mouth to mimic spooky Jack-o-lantern faces. Place these on the rice heads, pressing gently to secure.
  6. Serve: Arrange the Jack-o-lantern sushi heads on a serving platter and enjoy as a delightful Halloween-themed appetizer. Leftover green beans can be repurposed into crispy green bean chips or incorporated into other dishes.
