Ingredients
Chicken Marinade
- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 2 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Vegetables
- 2 large sweet potatoes, peeled and cubed
- 1 pound green beans, trimmed
- Olive oil for drizzling
- Salt and black pepper to taste
Instructions
- Prepare the marinade: In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, paprika, dried thyme, salt, and black pepper until fully combined.
- Marinate the chicken: Place the chicken breasts in a container or zip-top bag and pour the marinade over them. Refrigerate for at least 30 minutes and up to 8 hours to allow the flavors to infuse.
- Preheat oven: Set your oven to 400°F (204°C) to ensure it’s hot enough for roasting the vegetables and chicken.
- Prepare sweet potatoes: Arrange the peeled and cubed sweet potatoes on a lined baking sheet. Drizzle with olive oil and season with salt and black pepper, then toss to coat evenly.
- Roast sweet potatoes: Place the baking sheet in the oven and roast for about 15 minutes until the sweet potatoes start to soften but not fully cooked.
- Add chicken and green beans: Remove the baking sheet from the oven, push the sweet potatoes to one side. Place the marinated chicken breasts on the other side and arrange trimmed green beans around them.
- Drizzle remaining marinade: Pour any leftover marinade evenly over the chicken and vegetables to enhance flavor while baking.
- Bake until done: Return the baking sheet to the oven and bake for an additional 20-25 minutes. Ensure the chicken reaches an internal temperature of 165°F (74°C) and that the sweet potatoes are tender.
Notes
- Marinating the chicken longer, up to 8 hours, results in more flavorful and tender meat.
- Use a meat thermometer to accurately check that the chicken is cooked through safely.
- For added texture, you can sprinkle some chopped fresh herbs like parsley or thyme before serving.
- All ingredients can be adjusted to taste, such as adding more garlic or using low-sodium soy sauce for a healthier option.
